Chicken and Summer Squash in a Creamy White Wine Sauce
I was house sitting this weekend and wanted to make something new for dinner. C had joined me for dinner since we had only seen each other for a few hours. Usually whipping together a recipe is up his alley. But I wanted to try my hand. I settled on a chicken dish with some summer squash and zucchini. Surprisingly I also had the presence of mind to make note of the measurements of the ingredients and take pictures! Usually I think of it after I've cooked the entire thing and eaten it too. I digress.
This summer has been very hot and the last thing I wanted to do was work over a hot stove for longer than I needed to. I decided to come up with a quick summertime recipe. I wish I had thought to make up some fettuccine to mix in with the chicken, sauce and squash. It would have made the perfect companion.
Making it again I would add some garlic at the beginning and the rest when I added the wine. That way there would be a bit more flavor. Once you've made it let me know if you would make any adjustments!
RECIPE Chicken and Summer Squash in a Creamy White Wine Sauce
Ready in 30 minutes
Serves 4 people

1 lb Chicken thighs (Boneless)
¼ C White Wine
3 TBSP Butter
¼ C Cream
4 Cloves minced garlic
½ TBSP Italian Seasoning
Salt and Pepper to Taste
¼ tsp Onion Powder
2 medium Summer Squash or one squash and one zucchini
Cut the chicken thighs into bite sized pieces
Cut the squash in half and slice into bite size pieces.
Melt the butter over medium heat in a saute pan and saute the minced garlic.
Add the chicken and cook it until no pink remains and browned.
In a separate pan steam the cut squash.
Add the white wine, Italian seasoning, onion powder, salt and pepper to the pan. Simmer over medium heat for five minutes.
Add cream and simmer for another five minutes over low heat or until thickened.
Add the squash to the chicken and cream. Serve warm
