Baked Honey Garlic Chicken
Something I've discovered over the last year or so is that I truly enjoy cooking. Clean-up? Not so much. But being able to mix, stir, pour and cook things makes me happy. My apartment smelling amazing afterwards is an even bigger bonus! Lately I've been home enough that home cooked meals are becoming a regular occurrence. When I'm working full-time, and so is C, it's hard to get motivated to cook anything when we get home. So, I'm taking advantage of being home! Silver linings, right? Tonight’s dinner was a delicious Baked Honey Garlic Chicken. It was sweet with a bit of a kick. Something C really enjoys.
What’s not included in the recipe is the sautéed spinach we had with the Honey Garlic Chicken. It was a simple enough addition that I cooked up in the last ten minutes of the chicken baking. We also had rice with it. It’s been a while since we’ve had rice but C loves it and it worked in well with the rest of the plate. The best part about this recipe was that we already had the makings of the marinade on hand.
I mixed the parsley, basil, oregano, crushed red pepper, black pepper, garlic, soy sauce, ketchup and honey for the marinade. I didn’t have any zip-lock bags so I used a clip lock plastic container instead. Which actually made it easier because after I mixed it instead of having to transfer it to the bag I just added the chicken to the bowl. I clipped on the top and put it in the fridge for nearly five hours.
Once it was time to cook I preheated the oven, pulled the chicken out of the fridge and put it in a 9”x11” glass baking dish. I didn’t prepare the pan in any way, which adds to the ease of it don’t you think? Poured the remaining marinade over the top of the chicken and popped it into the oven for 60 minutes. When there was ten minutes left to the chicken I turned on the rice cooker and sautéed the spinach in olive oil and garlic. In all the time of active effort was about twenty minutes. Twenty minutes for a delicious, home cooked meal? I’ll take it! And lucky me, C did the dishes!
Honey Garlic Chicken
8 Boneless, skinless chicken thighs 2 TBSP Fresh Parsley
1tsp Dried Basil 1/2tsp Dried Oregano
1/4tsp Crushed red pepper 1/4tsp Black pepper
1/2c Soy sauce 1/2c Honey
1/4c Ketchup 2 Cloves of garlic, minced
Instructions 1: In a medium bowl mix everything BUT the chicken. 2: Put chicken in a zip-lock bag and pour marinade over it. Let marinate for 30 minutes to overnight. 3: Preheat oven to 375°F 4: Place marinated chicken into an oven safe dish. I used a 9”x11” pan. Pour remaining marinate over chicken. 5: Bake chicken for 60 minutes or until juices run clear and meat thermometer reads 165°. Notes This is a household favorite. I’ve used leftovers in chicken fried rice which is also a favorite!
